Today I want to share this delicious recipe for meat rolls with bacon, very easy to prepare so get to work.

We will need the following:

1 kg lomito
4 oz bacon
4 oz. Mozzarella cheese
1 chile
1 onion
3 garlic cloves finely chopped
1/2 tablespoon of pepper
1/2 tablespoon ground cumin
3 tablespoons vinegar
1 teaspoon chopped capers
10 sliced olives
3 tablespoons vegetable or aliva oil
Salt to taste

How to prepare it?

One day before, leave the tenderloin in brine with the garlic, pepper, cumin, vinegar and salt in the fridge.

Chop the onion and chili.

Cut the cheese into thin pieces.

Spread two strips of bacon on a board and place a slice of tenderloin on them.

At 1 centimeter. from the left end we put two strips of chili, onion, caper, olive slices and two pieces of cheese. Roll the meat, wrapped with the bacon ribbon.

Once the meat rolls are done, heat the oil, then place the rolls on a pan for seven minutes on each side. Cover the pan and lower the heat to a minimum leaving the meat to cook for 5 to 7 minutes. We put out the fire and wait about 15 minutes and they would be ready to serve.
