This salt and vinegar potato side dish recipe is a new recipe for me. The concept is cooking the potatoes in vinegar adds a subtle flavor of vinegar on the inside. You could even roast or grill the potatoes until crispy and then add additional vinegar/malt vinegar, sea salt and fresh chopped herbs of your choice. VIDEO RECIPE below. Bring to a boil, reduce heat, and simmer until potatoes are tender, 20–25 minutes; drain and pat dry. Season potatoes with kosher salt and pepper. Heat butter in a large skillet over medium-high heat. Cook potatoes, tossing occasionally, until golden brown and crisp, 8–10 minutes. Drizzle with remaining 2 Tbsp. vinegar.
