Pues yo ya lo he hecho en más de una oportunidad. Déjenme decirles que es una experiencia única. Al menos lo fue para mí la primera vez que lo experimenté.

Desde varios metros alrededor del cultivo, puede sentirse. Es meterse en una atmósfera densa, húmeda y un penetrante y delicioso olor inunda todos tus sentidos. De verdad que lo disfruté, creo que ese día me drogué con el aroma de las lechugas.

No es el repelente olor del momento en que cosechan las cebollas o el cebollín, que empiezas a llorar, aunque estés a varias cuadras del lugar. Tampoco lo que se experimenta con el cilantro o el celery, olores agradables, pero que, concentrado en un lugar, provoca rechazo por su potencia.

Con la lechuga, el olor se acerca más a oler sandías o hasta pepinos, un olor que no se impone, más bien se diluye, se funde con tu respiración y humecta tus pulmones; espiras su frescura.

Creo que estoy ya construyendo la ensalada que me comeré en la cena, solo me falta un poco de aguacate. Empiezo, separando las hojas de la lechuga. ¿Quién diría que algo tan humilde, tan… verde, podría despertar tal oleada de asombro? Su olor es más un susurro, una insinuación.

La tomo entre mis dedos y se siente fría al tacto. La textura, tan peculiar, suavemente crujiente, una fragilidad que se quiebra con un chasquido, una victoria efímera sobre el tallo, pero que en boca se rinde con una ternura casi indecente.

Pero es en el plato vasto de la ensalada fresca, donde la lechuga se revela en toda su gloria. Allí, abrazando rodajas de tomate, y tajadas de aguacate, y mezclándose con el picante brillo de la cebolla; allí, bañada apenas por un hilo de aceite, una pizca de sal, y jugo de limón, recién exprimido, es cuando la lechuga se convierte en reina.

Crujiente, en cada mordisco, ¡cómo la disfruto!, aunque solo sea ensalada de lechuga, con pan tostado, y ya estoy pensando en la ensalada César. Oh, lechuga, hoy quiero sentirme tan fresco como tú.

Have any of you visited a lettuce field during harvest time?

Well, I've done it more than once. Let me tell you, it's a unique experience. At least it was for me the first time I did it.

From several meters around the crop, you can feel it. It's like entering a dense, humid atmosphere, and a penetrating, delicious smell floods all your senses. I really enjoyed it; I think I got high on the aroma of lettuce that day.

It's not the repellent smell of the moment when onions or scallions are harvested, where you start to cry, even if you're several blocks away. Nor is it what one experiences with cilantro or celery, pleasant scents, but when concentrated in one place, they provoke repulsion due to their potency.

With lettuce, the scent is closer to the smell of watermelon or even cucumber, a scent that doesn't overpower, but rather dilutes, blends with your breath, and moistens your lungs; you exhale its freshness.

I think I'm already building the salad I'll eat for dinner; all I need is a little avocado. I begin, separating the lettuce leaves. Who would have thought that something so humble, so... green, could awaken such a wave of wonder? Its scent is more of a whisper, an insinuation.

I take it between my fingers and it feels cold to the touch. The texture, so peculiar, gently crunchy, a fragility that breaks with a snap, an ephemeral victory over the stem, but which surrenders in the mouth with an almost indecent tenderness.

But it's on the vast plate of fresh salad where lettuce reveals itself in all its glory. There, embracing slices of tomato and avocado, and mingling with the spicy brightness of the onion; there, bathed barely by a thread of oil, a pinch of salt, and freshly squeezed lemon juice, is when lettuce becomes queen.

Crispy, in every bite, how I enjoy it! Even if it's just lettuce salad, with toasted bread, and I'm already thinking about Caesar salad. Oh, lettuce, today I want to feel as fresh as you.
