El concurso es sumamente interesante, en parte, porque todos tenemos una trayectoria de vida en la destaca una búsqueda permanente con miras a alcanzar objetivos que nos hemos planteado, aunque pienso que cuando se alcanzan los objetivos, siempre surgen nuevos objetivos; es decir, la búsqueda nunca termina.

The contest is extremely interesting, in part, because we all have a life trajectory in which a permanent search stands out with a view to achieving objectives that we have set for ourselves, although I think that when the objectives are achieved, new objectives always arise; that is to say, the search never ends.

Desde niño siempre he sido observador de la naturaleza en todos sus aspectos y notaba que todo era armónico. Lo único que no lograba conciliar en su armonía fue lo que los humanos consumimos como alimento. Por ejemplo, un león está adaptado con caninos y garras para matar a un antílope, y el antílope está adaptado con orejas más largas que se mueven en todas direcciones para percibir cuando se acerca y patas más largas aptas para correr y escapar del león, asimismo, la dentadura del antílope está adaptada para arrancar y masticar hierba. Pensaba, los humanos no estamos adaptados para perseguir a un animal, arrancarle la piel y comer su carne cruda, lo que hacemos es criarlo para venderlo y luego comprarlo en algún establecimiento comercial para después en casa mejorar su sabor agregando condimentos y cocinándolo.

Since I was a child I have always been an observer of nature in all its aspects and I noticed that everything was harmonious. The only thing I could not reconcile in its harmony was what we humans consume as food. For example, a lion is adapted with canines and claws to kill an antelope, and the antelope is adapted with longer ears that move in all directions to sense when it is approaching and longer legs suitable for running and escaping from the lion, likewise, the antelope's teeth are adapted for tearing and chewing grass. I thought, we humans are not adapted to chase an animal, tear off its skin and eat its raw meat, what we do is to raise it to sell it and then buy it in some commercial establishment and then at home improve its flavor by adding seasonings and cooking it.

Con ese ejemplo, entre otras inquietudes relacionadas con la armonía entre humanos y la naturaleza, transcurrió gran parte de mi adolescencia. Cuando me gradué de Bachiller en Ciencias revisé el libro de carreras universitarias, ninguna captó mi atención y opté por no estudiar sino trabajar en cualquier ámbito, no obstante seguía indagando por mi cuenta sobre las inquietudes alimentarias. Cinco años después llegó a mis manos nuevamente un libro de carreras universitarias, lo revisé y encontré una nueva carrera que había sido abierta. Leyendo la descripción de la carrera me dije, esto es lo que voy a estudiar, esta carrera me ayudará a encontrar la verdad en lo que busco.

With this example, among other concerns related to the harmony between humans and nature, I spent most of my adolescence. When I graduated with a Bachelor of Science degree I looked through the book of university careers, none of them caught my attention and I chose not to study but to work in any field, however I continued to investigate on my own about food concerns. Five years later I came across a career book again, looked through it and found a new career that had been opened. Reading the career description I said to myself, this is what I am going to study, this career will help me find the truth in what I am looking for.

Me gradué como Ingeniero de Alimentos. El estudio formal me aportó mucho en áreas de la química. Encontré muchas respuestas pero también muchas preguntas nuevas. En otro sentido, me sentí plenamente identificado con un curso estructurado en la universidad, Metodología de la Investigación; ese curso me marcó, quizás en parte porque mi personalidad es perfeccionista, a lo que le sumo mi manía de simetría.

I graduated as a Food Engineer. The formal study gave me a lot in areas of chemistry. I found many answers but also many new questions. In another sense, I fully identified with a structured course in college, Research Methodology; that course marked me, perhaps partly because my personality is perfectionist, to which I add my symmetry mania.

Como egresado de la carrera trabajé en una industria procesadora de alimentos para animales. Trabajar allí me ayudó en la búsqueda. Luego de un tiempo decidí renunciar y volver a estudiar una carrera recién abierta de la que me había enterado cuando estudiaba pregrado, Maestría en Biotecnología Alimentaria. Es curioso que cuando estudiaba pregrado, los cursos con los que menos me sentía identificado eran con los relacionados a las enzimas, pero en ese posgrado prácticamente todo era enzimas, y a la final aprendí lo que no había aprendido muy bien en pregrado.

As a graduate I worked in an animal feed processing industry. Working there helped me in my search. After a while I decided to quit and go back to study a newly opened career that I had learned about when I was an undergraduate, Master in Food Biotechnology. It is curious that when I studied as an undergraduate, the courses with which I felt less identified were those related to enzymes, but in that graduate program practically everything was about enzymes, and in the end I learned what I had not learned very well in undergraduate.

Para mi Tesis de Maestría, solicité en la universidad donde hice pregrado, que me permitieran hacer los ensayos experimentales en un laboratorio y todo fue aprobado. Luego de culminar mi tesis opté por transformarla en un artículo de investigación para publicarlo en una revista científica, se me hizo muy fácil por sentirme identificado con la metodología de la investigación y lo publiqué.

For my Master's Thesis, I asked the university where I did my undergraduate studies to allow me to do the experimental tests in a laboratory and everything was approved. After finishing my thesis I chose to transform it into a research article to publish it in a scientific journal, it was very easy for me to feel identified with the research methodology and I published it.

Me gradué de Magister Scientiarum en Biotecnología Alimentaria y en la universidad donde hice el pregrado me contrataron como Investigador en el laboratorio. En ese laboratorio realice varias investigaciones. En los procesos de publicación de algunas de las investigaciones en las revistas científicas aprendí como evaluaban lo que enviaba para ser revisado y en algún momento pensé que tenía capacidades para evaluar investigaciones de otros. En tal sentido, decidí renunciar al laboratorio y enfocarme en la creación de una revista científica en línea. Para eso tenía que estudiar diseño web y diseño gráfico.

I graduated from Magister Scientiarum in Food Biotechnology and at the university where I did my undergraduate studies I was hired as a researcher in the laboratory. In that laboratory I conducted several researches. In the process of publishing some of the research in scientific journals I learned how they evaluated what I sent to be reviewed and at some point I thought I had the ability to evaluate the research of others. In that sense, I decided to quit the laboratory and focus on creating an online scientific journal. For that I had to study web design and graphic design.

Mientras estudiaba diseño web y gráfico, culminé los procesos de publicación de investigaciones pendientes y de nuevas investigaciones que realicé por mi cuenta sin necesidad de un laboratorio, relacionadas con el diseño gráfico y los alimentos; todas fueron publicadas. Curiosamente, por alguna razón, me empezaron a llegar a mi correo electrónico investigaciones de revistas científicas para que las evaluara, esto fue muy útil porque hacia eso estaba dirigiendo mis esfuerzos. Una de las revistas me solicitó que integrara su Cuerpo Editorial de manera formal y acepté.

While I was studying web and graphic design, I completed the publication processes of pending research and new research that I conducted on my own without the need of a laboratory, related to graphic design and food; all of them were published. Curiously, for some reason, research from scientific journals started to arrive to my email for me to evaluate, this was very useful because that was where I was directing my efforts. One of the journals asked me to join their Editorial Board in a formal way and I accepted.

Un día decidí estaba preparado para dar inicio a la creación de la revista académica-científica, con tarjeta de crédito compre un dominio web y alojamiento en un servidor. Revisé currículums en línea e invité a investigadores de muchos países, por una parte a someter sus trabajos para evaluarlos con miras a publicar en el primer número y por otra parte para que se integraran al Cuerpo Editorial. Registré una Asociación Civil de carácter privado que sería la persona jurídica, elaboré el reglamento interno y la guía de autores, entre otros. Hice la página web, el logo de la revista y todo el diseño gráfico necesario. En paralelo, empecé a ejercer las funciones editoriales. Desde el día en que di inicio a la creación hasta la publicación del primer número, transcurrieron seis meses. El trabajo fue intenso.

One day I decided I was ready to start the creation of the academic-scientific journal, with a credit card I bought a web domain and hosting on a server. I reviewed resumes online and invited researchers from many countries, on the one hand to submit their work for evaluation with a view to publishing in the first issue and on the other hand to join the Editorial Board. I registered a private Civil Association, which would be the legal entity, prepared the internal regulations and the authors' guide, among others. I created the website, the journal's logo and all the necessary graphic design. At the same time, I began to exercise the editorial functions. From the day I started the creation until the publication of the first issue, six months went by. The work was intense.

Durante siete años ejercí las funciones editoriales en la revista, logrando publicar 108 investigaciones de varios países y haciendo que la revista fuera indizada en las mejores bases de datos evaluadoras de revistas académico-científicas. Lamentablemente tuve que suspender la recepción de trabajos debido a la nefasta economía del país, además perdí el dominio web y todo lo publicado lo trasladé a un sitio web gratuito de Google. No he cerrado la revista, solo la mantengo en espera, ya lleva más de tres años esperando.

For seven years I held the editorial functions in the journal, managing to publish 108 researches from several countries and having the journal indexed in the best academic-scientific journal evaluation databases. Unfortunately I had to suspend the reception of papers due to the dire economy of the country, I also lost the web domain and everything published was moved to a free Google website. I have not closed the journal, I just keep it on hold, it has been on hold for more than three years now.

En esa espera organicé una gran cantidad de pensamientos en relación con la búsqueda de respuestas sobre la alimentación humana, pensamientos que me acompañaron durante más de treinta años. Luego de organizarlos en un sentido me dediqué a encontrar literatura científica para redactar y publicar un libro. La realidad es que conseguí muchas respuestas, que aunque se engloban en una conclusión bastante compleja, me satisface.

In that wait I organized a lot of thoughts in relation to the search for answers about human nutrition, thoughts that accompanied me for more than thirty years. After organizing them in a direction I devoted myself to find scientific literature to write and publish a book. The reality is that I got many answers, which, although they are encompassed in a rather complex conclusion, I am satisfied.

Pienso que el proceso de aprendizaje nunca termina, porque un aprendizaje te lleva a otro proceso para aprender. Actualmente escribo un libro sobre vitaminas, a futuro espero empezar a organizar un material que tengo, que no es sobre alimentos, sino sobre un insecto al que le hice seguimiento, para después redactar y someter a evaluación en una revista científica.

I think the learning process never ends, because one learning leads you to another process to learn. I am currently writing a book on vitamins, in the future I hope to start organizing a material that I have, which is not about food, but about an insect that I followed up, to then write and submit for evaluation in a scientific journal.

Finalmente para complementar, muchas personas de alguna manera colaboran para el logro de objetivos de otras personas y no necesariamente son personas que uno conoce. Cuando uno lee un libro, en realidad lo que está leyendo es en gran parte el pensamiento del escritor. Haber leído libros del filósofo Jiddu Krishnamurti, me ayudó a encontrar estrategias para sobrellevar mi personalidad perfeccionista y el haber leído la literatura científica de la antropóloga Katharine Milton, me ayudó a dar claridad y conciliar muchos pensamientos mientras redactaba el libro.

Finally, to complement, many people in some way collaborate for the achievement of other people's objectives and they are not necessarily people you know. When one reads a book, in reality what one is reading is in large part the thinking of the writer. Having read books by philosopher Jiddu Krishnamurti helped me find strategies to cope with my perfectionist personality and having read the scientific literature of anthropologist Katharine Milton helped me to clarify and reconcile many thoughts while writing the book.
