Spicy Chorizo and Chicken Shawarma / Shawarma de Pollo y Chorizo Picante

I really like Lebanese or Middle Eastern food, and although I am not an expert, I have had the opportunity to learn a little about their gastronomy. Today we are going to prepare a dish that is part of their fast food or street food, chicken and chorizo shawarma. The shawarma is a kind of sandwich made with thin cuts of meat or grilled chicken, vegetables and Arabic sauces. >Me gusta mucho la comida libanesa o del medio oriente, y aunque no soy experta, he tenido la oportunidad de aprender un poco sobre su gastronomía. Hoy vamos a preparar un platillo que forma parte de su comida rápida o comida de calle, shawarma de pollo. >El shawarma es una especie de sandwich que se hace con finos cortes de carne o pollo asado, vegetales y salsas árabes.

Although we do not have a vertical rotisserie for cooking chicken, we can use other kitchen utensils and prepare these delicious shawarmas at home. >Si bien no contamos con un asador vertical para la cocción del pollo, podemos utilizar otros utensilios de cocina y preparar estos ricos shawarmas en casa.

Ingredients

pita bread
1/2 Kg chicken breast
1/2 Kg of spicy chorizo
white cabbage, finely chopped
purple cabbage, finely chopped
parsley, finely chopped
Ripe tomatoes
7 arabian spices
canola oil
lemon juice
4 tablespoons mayonnaise
8 grains of garlic
salt and pepper to taste

Preparation / Preparación

In a frying pan or budare, we will roast the tomatoes. To do this, cut them in half and add a little oil, salt and pepper. >En una sartén o budare, asaremos los tomates. Para ello, los cortamos por la mitad y les rocíamos un poco de aceite, sal y pimienta.

While all the above is cooking, we will prepare a salad with the two types of cabbage and parsley. Dress it with lemon juice, oil and salt. >Mientras todo lo anterior se cocina, prepararemos una ensalada con los dos tipos de repollo y el perejil. La aderezamos con jugo de limón, aceite y sal.

For the sauce, we crush the garlic grains, add the mayonnaise, a little lemon juice, a little of 7 arabic spices, salt and pepper to taste. Mix well. >Para la salsa, machacamos los granos de ajo, incorporamos la mayonesa, un poco de jugo de limón, un poco de 7 especias árabes, sal y pimienta al gusto. Mezclamos bien.

To finish, we pass the pita bread over the fire to warm it up a little, and place pieces of chicken and chorizo, a portion of salad, a few pieces of roasted tomato, and a generous amount of garlic sauce. Roll up the bread and eat. >Para finalizar, pasamos el pan de pita por el fuego para calentarlo un poco, y colocamos trozos de pollo y chorizo, una porción de ensalada, unos trozos de tomate asado, y una generosa cantidad de salsa de ajo. Enrollamos el pan, y a comer.
