Do you like soup? I understand that many people don't like soup, they usually say that it doesn't fill them up or they don't find it very tasty. In particular, I like soup very much, I can say that I like all the soups I have tasted, among them: Chicken soup, fish soup, meat soup, lentil soup, black bean soup, red bean soup, bean soup, pea soup, mondongo soup and I don't remember more but I'm sure there is another one that I like. In my other town, Caripe, they make a combination of grain soup with pork skins, in this opportunity I share this recipe with you.

¿A ustedes les gusta la sopa? Tengo entendido que a muchas personas no les gusta la sopa, suelen decir que no les llena o no les resulta muy exquisita de sabor. En lo particular a mi me gusta mucho la sopa, puedo decir que todas las que he probado me gustan mucho, entre ellas: La sopa de pollo, de pescado, de carne, de lentejas, de caraotas negras, de caraotas rojas, de frijoles, de arvejas, de mondongo y no recuerdo más pero seguro hay otra que me guste. En mi otro pueblo, Caripe, hacen una combinación de sopa de granos con pellejos de cochino, en esta oportunidad les comparto esta receta.

# Ingredients: For 10 people - 250gr of Auyama. - 1/2kg of Ocumo. - 1/2kg of Red Caraotas. - 200gr of sweet potatoes. - 1 plantain. - 1 Onion. - 4 Chili peppers. - Chives. - 200gr of Pellejo de Cochino. - Salt and Oregano.

# Ingredientes: Para 10 personas - 250gr de Auyama. - 1/2kg de Ocumo. - 1/2kg de Caraotas Rojas. - 200gr de Batatas. - 1 Plátano. - 1 Cebolla. - 4 Ajíes. - Cebollín. - 200gr de Pellejo de Cochino. - Sal y Orégano.

- First we must put the beans to parboil so that they soften and can be eaten without difficulty. It is important to do this step several hours before making the soup, the time will depend on the quality of the Caraota, the average is normally for one hour.

- Primero debemos colocar las caraotas a sancochar para que estas se ablanden y puedan comerse sin dificultad. Es importante hacer este paso varias horas antes de hacer la sopa, el tiempo va a depender de la calidad de la Caraota, el promedio normalmente es durante una hora.

- While these are boiling we can peel and chop the vegetables of our soup, starting with any of them, the important thing is to peel the okra, the sweet potato and the plantains, the pumpkin can be left with the shell, it depends on the taste.

- Mientras estas se estan sancochando podemos pelar y picar las verduras de nuestra sopa, empezando por cualquiera de ellas, lo importante es pelar tanto el ocumo, la batata y los plátanos, la auyama pueden dejarla con la concha, depende del gusto.

- We also chop the seasonings that will give part of the taste to the soup, among them the onion, the chili peppers, the chives and the ajó. We chop them into cubes and wait for the moment to add them.

- También picamos los aliños que le van a dar una parte del gusto a la sopa, entre ellos la cebolla, los ajíes, el cebollín y el ajó. Lo picamos en cuadritos y esperamos el momento para agregarlos.

- We chop the skin of the pork in small pieces or the size of our preference, then we take it to a pot with a little water to soften it and add a little oregano.

- Picamos el pellejo (o piel) de cochino en trozos pequeños o del tamaño de nuestra preferencia, luego lo llevamos a una olla con un poco de agua para que se ablanden y agregarnos un poco de orégano.

- When the water that we put to the skins is evaporating we add the seasonings that we chopped previously, we also season with salt, adobo or sauces of our preference. Then we wait for it to dry completely.

- Cuando el agua que le colocamos a los pellejos se este evaporando agregamos los aliños que picamos anteriormente, también condimentamos con sal, adobo o salsas de nuestra preferencia. Después esperamos a que seque totalmente.

- After the hour, or when the beans are loose, we proceed to add the vegetables already cleaned and chopped in the size of our preference, the smaller they are, the faster they will soften.

- Pasada la hora, o cuando las caraotas estén flojas procedemos a agregar las verduras ya limpias y picadas del tamaño de nuestra preferencia, mientras más pequeñas más rápido se van a ablandar.

- We wait approximately 15 minutes to add a branch of cilantro and let cook another minutes more.

- Esperamos aproximadamente 15 minutos para agregar una rama de cilantro y dejamos cocinar otros minutos más.

- When the vegetables are softening we proceed to add the plantains that we chopped previously, it is also the ideal moment to add the skins.

- Cuando las verduras se estén ablandando procedemos a agregar los plátanos que picamos anteriormente, también es el momento ideal para agregar los pellejos.

- Once all the ingredients have softened and are perfectly cooked we can turn off our soup and let it rest for a few minutes to cool down a little and then serve it in a dish.

- Una vez todos los ingredientes se hayan ablandado y estén perfectamente cocinados podemos apagar nuestra sopa y la dejaremos reposar por algunos minutos a que se enfrié un poco para luego servirla en un plato.

Many people like salty grains and others like sweet grains, in particular I like them sweet, that is why I add a spoonful of sugar to my soup when I go to eat, this gives it a good flavor according to my personal taste. A muchas personas les gustan los granos salados y a otras los granos dulces, en particular a mi me gustan dulces, es por ello que agrego una cucharada de azúcar a mi sopa cuando voy a comer, esto le da un buen sabor según mi gusto personal.
