I really love eating coconut rice, the enticing aroma of it when mixing with accompanying spices keep reminding me of having a taste of it at least once in two weeks. Today, I had a pause on everything and decided to wake up very late that I didn't even attend the church service. Oh my God have mercy!. Cooking my coconut rice was the topmost of my weekly planner*. *I started the day in a lazy manner, taking pap and akara (bean cake) for breakfast with my daughter Sharon. Watching the red hue of the morning sun shadowing a pattern streamed into my house window, I needed not hurry to be anywhere than to be in my kitchen cooking my creamy coconut rice, a perfect recipe for a relax day*. ![IMG_20250126_124419_879.jpg](https://cdn.steemitimages.com/DQmaqtJQA474L2npUeupT3WA1S6CW88cBu1C7kDgxHY4VcQ/IMG_20250126_124419_879.jpg) *Later on I displayed the ingredients for my food. Dry coconut, rice, dry Fish, crayfish, fresh pepper, Knorr cubes, salt and other spices. As I grated the coconut using native grater, strained out the milk into my parboiled rice in the pot along with other ingredients*. *I set the pot on fire. As the pot began to boil, bubbles of creamy coconut milk began to spill out sending out an enticing aroma of coconut rice blended with other spices. I flung my door curtain open for air to gain entrance rendering coolness to enjoy my yummy dish.
