First I strain chickpea flour through a sieve. To make perfectly crispy eggplant fries, chickpea flour must be milled well. I added turmeric powder for nice color. Beat it very well so that there are no lumps in the batter. The eggplants should not be too thin and not too thick. When the oil is hot, dip the brinjal and fry it in the hot oil. A little more oil should be given to fry brinjal crispy.
