There are so many reasons to take advantage of garden fruits and vegetables or the farmer’s market and create beautiful, healthy salads that you can eat alone or pair with a side of meat. I like to make a huge salad with kale, cabbage, watercress, and sprouts on Sundays, then I add whatever ingredients inspire me throughout the week. Broccoli, tomatoes, and cucumbers with vegan ranch or grapefruit, avocado, and coconut roasted chickpeas with tahini dressing are another favorite.
