My Sunday Breakfast// Jollof Rice [22-06-2025]

New week greetings my steemian friends, please follow me as I take you on the step-by-step process I took to cook my breakfast yesterday. Sunday, June 22nd, 2025, was a special day - a day to savour a delicious Sunday breakfast with my little son, Princewill. On the menu was our favourite dish, jollof rice, affectionately known as "MTN rice" due to its vibrant yellowish hue reminiscent of the MTN Telecommunications Company colour.

THE PROCESS

To start, I gathered all the
necessary ingredients:
• Three cups of rice
• Dry fish
• Seasoning cubes (Maggie)
• Onions
• Palm oil
• Salt
• Cori leaves
• Fresh pepper and
• Crey fish

I began the cooking process by boiling the rice for 30 minutes on the gas cooker, allowing it to simmer. Next, I washed the rice to remove excess starch and dirt, then filtered it to ensure it was clean.

In a medium-sized pot, I heated some palm oil over the gas cooker. Once hot, I added chopped onions and let them fry for a few seconds. Then, I poured in two cups of water, adding dry fish, Maggie cubes, salt, and pepper. I let the mixture boil for about 8 minutes, allowing the flavours to meld together.

After 8 minutes, I added the filtered rice, stirring well to combine the ingredients. I left it to cook for 5 minutes, allowing the water to soak into the rice.

Finally, I added chopped cori leaves and stirred them in to release their aroma. I covered the pot for a minute, and when I lifted the lid, our MTN rice was done.

I scooped a generous portion for myself and Princewill, and we sat down together at the dining table. The aroma of the cori leaves and the savory flavors of the jollof rice filled the air, and we enjoyed our Sunday breakfast together, savoring every bite.
