I often cook Chicken Karahi when I am feeling down or I need an emotion boost. The smell, delectable taste, and spice came in at the right places to boost my spirit and invigorate me.
What is the process for making it? (share the steps ) |

1/2 Kg chicken (with bones or without bones)
3-4 tomatoes (whole, chopped or blended)
1tbls ginger-garlic paste
2 3 green chiley (slit)
optional, to be extra rich, use 1/2 cup yogurt
1 tsp red chili powder (to taste)
1 tsp pepper (black)
1 tsp of smashed coriander seeds
To taste salt
Garnish ф origana fresh
A 1/4 cup of oil or ghee
Steps |

- Warm oil or ghee in a wok (karahi) on medium heat.
- Add ginger-garlic paste and saute a minute and until aromatic.
- Add chicken and fry until it changes color to white (56 minutes).
- Add tomatoes which are either blended or chopped, salt and red chili powder. Cook in medium heat until the oil separates and tomatoes degrade.
- Add black pepper and yogurt (in case you use it), crushed coriander seeds. Stir well.
- Put an addition of green chilies and allow the chicken to simmer till getting soft and the masala thickens.
- Topped with fresh coriander and hot serve with naan or roti.

On the event that I am not at home with the ingredients:
I will order it either to a local desi restaurant in which I am comfortable with.
Or I will replace with what we have-like only tomatoes and black pepper to make it simpler, or even go to the extent of using egg karahi when we have no chicken available.
