Recipe of the Day: Bitter Leaf Soup

It's another great day to share my unique recipe with everyone here and this special recipe is a local delicacy called; BITTER LEAF SOUP.

This soup is best served with swallow so I made fufu to accompany it.

I will share the recipe of bitter leaf soup and also the preparation process of fufu.

PART 1: BITTER LEAF SOUP

Below are the ingredients used and the preparation procedures for this recipe;

The Ingredients Used
  • Bitter leaf
  • Water leaf
  • Meat
  • Dried fish
  • Stock fish
  • Cow skin
  • Shell periwinkle
  • Palm oil
  • Crayfish
  • Onions
  • Maggi
  • Salt
  • Fresh pepper
Preparation Procedures

Step 1: wash the beef and add the following ingredients; onions, maggi, salt and fresh pepper. Add a little water and steam till the beef get soft.

Add cow skin, dried fish and stock fish to it and continue steaming.

Step 2: Pour sliced water leaf into the steamed proteins and add red oil then cover the pot to boil.

Step 3: Check the taste before adding small amount of; maggi, salt, fresh pepper. Add periwinkle to it and allow it to cook.

Step 4: Add bitter leaf, blended crayfish and a little drop of red oil and allow the soup to cook for at least 2 minutes.

My delicious local delicacy is ready!

Let's proceed to part two where I will be showing how I made the swallow.

PART 2: PREPARATION PROCEDURES FOR SWALLOW ( FUFU)

Step 1:Dilute the wet cassava flake with water and mix it to give a smooth texture. Set it on low heat flame and stir continuously.

Step 2: Add a little water and continue to turn it. Mix and mold with hand to a smooth form.
