Greetings chefs!

Lovers of dessert Welcome to my blog,

How mush do you love corn? How often do you make them for your family? Did you know apart from beans moi moi can be made from something else and it turns out just great? Let's try something new.

On my today's menu i have Ekoki (steamed corn pudding)moi moi that is made with corn am happy to share the recipe read through and learn the process of making this delicious recipe.

Ingredients

• maize
• fish
• onions
• pepper
• seasoning cubes
• palm oil
• moi moi leaves for wrapping

Firstly after i sourced the corn i peeled off the skin ( any type of corn can be used) i set that aside and proceed to use warm water to washed the leaf, warm water soften the leaf to prevent crack while in use.

I used knife to sliced off the kernel from the cub washed and to get rid of impurities cover the corn and set that set clean and washed ingredients to be blended together.

After i had washed and peeled the onions i cut them in half to fit into the blender for then added pepper added a little bit of water for blending.

No need to make the paste too smooth so i blended just once the blended also helped in marinating the onions and peppers the onions are peppers was enough for the pudding.

I sectioned the mackerel fish into preferred size season with cubes and salt with pepper then cook for 5 minutes after 5 minutes i got it off the heat and set it aside.

Here i poured almost all the ingredients except the fish, i added oil and gave it a good stir to marinate then i started wrapping using a leaf i placed some corn cub of the pot to avoid burning.

I carefully wrapped the the paste into the leaf adding the fish to each wrap, boiled water and carefully poured into the pot and cooked for 20 minutes after 20 minutes my steamed corn pudding was ready.

This was all the process i did to achieve this delicious corn pudding

Cultural background

Ekoki ( steamed corn pudding) is one of our local cuisine which is also our cultural heritage mostly used in the Akwaibom and crossriver cultural festival custom that showcase the community respect for traditional local dishes.
